I'm sure I am not the only one to have noticed the mass increase of American and Tex-Mex style dining options available in Sydney during the past year or so. After watching many, many episodes of American MKR and Hell's Kitchen, I was intrigued at the idea of southern smoked bbq (there was an ep where they had to smoke their own ribs for 12 hours!). My prayers were answered when Memphis Wings opened up in Casula, much closer than a commute into town for me. The place had a nice set up with plenty of outdoor dining, large tables for big groups and lots of car park. However, going on a Friday night at 7pm was probably the worst idea as it was more than an hour wait for food.

The drinks arrived around 20 mins after we sat down. They were refreshing and not too sweet, however very artificial - whether or not that's a good or bad thing I leave for you to decide.
Cheesy Fries - melted cheese topped w bacon and sour cream $9.50
After seeing Ando from thelamstock's post was was excited to try the cheese fries (uh, potato - my fav!). However, you can see that ours looked nothing like his. There was a small smidge of sour cream and a sprinkle of "bacon" (it did NOT look like bacon..). The chips were not fresh or crunchy and as an advocate potato, bacon and cheese lover, I was not impressed :-(
10 wings w peri peri sauce $14
We had a bit of an issue ordering the wings. Originally wanted to order the 20 pk of wings. However they insisted they were out of 20 pks and only had 10 pks available. We asked "isn't 2 x 10 pk = 20 pk!??!" The 2 x 10 pk costed an additional $4.00 however, and they refused to just give us 2x10 (which how 20 pk are served anyway) for the same price as a 20 pk. It really was the principle of the matter.
The peri peri sauce was quite nice, but as you can see from the picture they were all the drumstick portion of the wing. The curly fries were nice with the peri peri sauce though.

10 wings w chipotle BBQ $14
The chipotle sauce had a nice fiery kick that I enjoyed but was a bit too much heat for the others.
Baby back pork ribs full rack served w curly fries and (sans) corn $29.95
The beef, pork and chicken are all marinated in a dry rub then smoked in a house with a mixture of hickory, mesquite and apple wood. The beef was nice in flavour and cooked well, but did not justify the 1 hour long wait. Anders remarked that he would prefer Hurricanes ribs instead. Also the menu included corn which was not present.
American Style Burger - angus beef, lettuce, fried onions, cheese, mayo w vatos locos sauce $8.50
This was my dish. The patty was well seasoned however it was served on a cold bun - yes, not room temp but actually just out of the fridge COLD. Not very pleasant let me just say. I got it with the vatos locos sauce which is the most extreme chilli out of the 5 choices, and I needed a fire to be put out of my mouth. Usually I would be the one ordered my Lao Paw Paw salads with extra chilli, however this was beyond any sort of spice I have had. It was so spicy you didn't taste any other flavour because your taste buds were burned off. Needless to say I was unable to finish the burger.
We did not have a pleasant experience at Memphis Wings. There was no more cutlery so we asked the staff to wash a fork for the ribs, and one was never given. Tired of waiting, Anders just used his hands. In terms of food there was nothing that stood out, nothing that I would not rather eat elsewhere for for the same price.
I made a second trip there after shopping at the new Costco that opened across the road from Memphis Wings. This time it was less packed with only 2-3 other tables and it was just as bad. There were a couple of things ordered that were similar, and when asked the staff which is what he told us something that was completely different to what we ordered. When we told him we did not order that dish, we ordered this dish, he replied "Oh well, that's that one then."
