Recipe: Spinach and Ricotta Rolls

Here's another quick, delish and semi-healthy recipe for you all. I had a massive craving for spinach and ricotta rolls, and decided to try bake my own instead of buying store ones that are full of nasties. Admittedly not the healthiest of choices, but the key to eating healthy is moderation so why deprive yourself when you can just find better alternatives.  

I wasn't planning on posting the recipe up so I didn't take any photos, but it's very simple and I'm sure anyone who attempts to make it will be successful.

What You'll Need

1 small red (spanish) onion, diced
250 g frozen spianch, thawed and squeezed of liquid
250 g ricotta cheese
50 g crushed walnuts (the recipe called for pine nuts but I didn't have any at home so substituted walnuts instead to give it a nice crunch. Worked just as brilliantly!)
Salt and Pepper to taste 
1 egg lightly beaten, mixed with a little milk
1 egg lightly beaten
2-3 sheets of puff pastry, thawed (I used two, so depends how much batter you put in) 

What To Do

1. Preheat oven to 200C (390F) fan forced or 220C (435/430F) conventional. Note variations between different ovens. 
2. Heat some oil in a fry pan, add onion and fry gently for 2 mins. Add spianch, nuts, and season with salt and pepper to taste. Cook for 5 mins then let cool.
3. After mixture has cooled a bit, in a mixing bowl combine spinach with ricotta and mix thoroughly. Then add the lightly beaten egg with milk and mix well. 
4. Place pastry sheets on flat service and cut in half (I cut it horizontally cause then it's easier to roll)
5. Spoon mixture along the length (long side) of each half of the pastry. Spoon mixture to your own discretion, but not too much so that it overfills and you can't roll them. My mixture was prob around 5cm in width. Brush down length of other side of pastry with water, the water holds the pastry sides together so they won't unfold. Roll them up carefully and repeat with other sheets. 
6. Cut to preferred size, I cut them into quarters (half and half again).
7. Put a couple of slits or poke a few holes in them to let steam escape.
8. Place on baking tray, seam side down 
9. Bake in oven for approx 15mins, or until golden brown. I added some parmesan cheese on the top of a few of the rolls to try out. They were super delish as well! 

Viola! I had 2 for morning tea, and put the rest in a container and into the freezer. They only need a couple of mins in the oven from freezer. I couldn't resist using a bit of tomato sauce with it though (naughty). 

Fresh outtah the oven!
