Hi everyone, hope you've all had a wonderful Easter last week. This year I decided not to binge on chocolate and continue on a healthy and happy path (haha, still working on the healthy part). Instead, I got inspired to bake these yummy and healthy Easter treats.

This recipe uses spelt flour. Many people have no idea what this "health food" is. Spelt Flour is basically a wheat-free flour, therefore great for people who are wheat intolerant. Spelt flour contains gluten making it a great flour to bake with because you are less likely to compromise the texture of baked goods. It has a nutty and slightly sweeter flavour. Spelt flour is also higher in minerals and protein compared with wheat flour, making it a healthier option to use. 

The use of rolled oats and spelt flour makes these buns quite dense (heavy) and not fluffy like the commercial ones we are use to. Commercial versions, of course, contain highly processed ingredients that are harmful to our bodies and are harder to break down. These healthier alternatives are delish as well as nutritious, with a good source of fat from the coconut oil, fibre and protein from the oats and spelt flour. They also contain natural and complex sugars from the honey, and are rich with protective antitoxidants from the blueberries and dark choc. 



What You'll Need
3 cups whole spelt flour
1/2 cup rolled oats
2 tsp cinnamon, ground
1 tsp salt
3 tsp baking powder
1/3 dried blueberries
2 eggs (one to glaze)
1/4 cup coconut oil
2 tbsp honey
1 tsp vanilla extract or vanilla bean paste
1/2 - 1 cup milk of choice (I used almond)
50g dark chocolate chopped (I used dark choc chips)
50g extra dark choc, for the crosses


How To Make It


Add the flour, oats, cinnamon, salt and dried blueberries to a bowl. Sift in the baking powder. Stir well to combine.
Then add one egg, honey, vanilla, chopped dark choc and coconut oil, again stirring well to combine.
Add enough milk to make the mix form a sticky dough (I used around 3/4 of a cup, depending on type of milk used).

Preheat oven to 180 degrees Celsius. Using floured hands, roll handfuls of bun mixture and place onto baking paper lined tray. Make sure they are floured, or mixture will stick to your fingers and not form balls.
Whisk the second egg well, then apply liberally over the top of each bun using pastry brush.

Bake in oven for approximately 12 mins, or until golden brown.

Allow to cool for 10 mins. Temper the extra dark choc and pour into a piping bag to pipe a cross on top of each bun. 

Ta-dah! Super easy and simple healthy treat. I had two for morning tea, with my morning tea and used a bit of organic strawberry spread with it. Super delish! They actually remind more of scones because of the density. I think next time I will put a bit more cinnamon and dried blueberries in, just for my liking though.
