My friends and I figured that in 3 months time we have to be half naked for 90% of our trip overseas/ summer holidays. Lately, we've all been doing the whole eat healthy/cook for yourself/eat at home thing. As much of an amateur that I am, I love cooking and looking at recipes and just that satisfaction that you can make something so good with your own two hands (whoa, deep).
I found this simple and easy hotdog recipe in a free copy the Woolworths Fresh magazine and adapted it a bit. Enjoyable by the whole family, easy to cook and prep and not costly at all. In the magazine they used pork sausages, but I decided to try out these turkey ones they had available in the meat section - which were just as delish!
Turkey Sausage & Caramelised Onion Rolls (or as I like to call them, hotdogs!)
Serves: 4 people, or 2 very hungry people!
2 tsp olive oil
4 sausages
1 medium onion, halved and thinly sliced
1 tbs balsamic vinegar
4 bread rolls (I used smaller petit pain rolls, less carbs!)
baby rocket leaves and tomato & mustard sauce to serve
Sweet Potato Fries
4 medium sized potatoes? Depends how much you want to make I guess but I think 4 is a good amount for 2 people.
Oil spray (I used Olive cause that was what I had at home)
Paprika, grounded pepper and salt to season.
1) Preheat oven to 210 degrees Celcius.
1) Peel sweet potatoes (with a peeler, duh)
2) Slice potato up into small chip-like strips. As you can see, I have a very blunt knife hence why my chips are the best cut but I was only eating them myself and not on a Masterchef challenge for presentation so I lived with my ugly cut chips, haha.
3) Line tray (preferably one that isn't flat) with baking paper, spray with oil generously and season with paprika, pepper and salt.
4) Bake in oven for aprox 20 minutes or until chips are golden brown. Flip them around after 10 minutes so that both sides are evenly crisp.
I didn't have time to take photos while cooking my sausages but it was heaps simple:
5) Heat oil in frying pan over medium heat. Cook sausages. Sausages are difficult to cook; to not burn the outside but thoroughly cook the inside. I made a small slit through the sausage and then filled the pan with a half a small bowl of water and let that simmer through. The water will help cook the sausages faster without burning them, and will evaporate after a few minutes so that you can fry the sausages again! Remove the sausages from pan and cover to keep warm.
6) With a bit of oil in the pan, cook the onions for 10 minutes or until lightly browned, stirring in between so that they won't burn. Add balsamic vinegar to give it that tangy kick. Additionally, you can add brown sugar as well to help caramelise it and balance the flavours out.
7) Meanwhile, split the rolls on the side. I put mine in the oven for a few minutes to warm them up a bit.
8) Remove rolls from oven. Fill with rocket leaves, sausage and onions. Add tomato and mustard, or alternatively use barbeque sauce, and serve!
9) Your sweet potato fries should be done by the time you finish cooking the sausages and onions as well, so remove them from oven to serve with your hotdogs. Omnomnom!
